Salts And Peppers Build A Union At Starbucks

Starbucks Workers United recently celebrated the unionization of their 600th store, disproving reams of conventional wisdom: you can’t organize small shops… you can’t organize high-turnover workplaces… you can’t organize young people. For a gripping first-person account of how it happened, read Jaz Brisack’s new book Get on the Job and Organize. Brisack, who uses they/them pronouns, salted at the first Starbucks store to unionize, in Buffalo, New York, but the book starts with their roots in the South and the attempt by the Auto Workers to unionize a big Nissan assembly plant in Canton, Mississippi in 2017.

What Is Salting?

The resurgence of the American labor movement is being led in no small part by a cohort of young, diverse, fired-up workers around the country. Union density remains embarrassingly low overall, but last month the National Labor Relations Board, or NLRB, released some genuinely inspiring numbers that suggest the perceived upswing in union activity is more than just a vibe. During the 2024 fiscal year, which ended in September, the number of union petitions filed jumped 27% compared with 2023 — and was more than double what the agency received in 2021. Why does this matter? Basically, filing these petitions is a concrete sign that more people are trying to unionize their workplaces.

The Undercover Organizers Behind America’s Union Wins

If you want to unionize a workplace, Will Westlake was saying, get used to unclogging the drains. At a secret off-hours gathering held in Rochester, New York, in March, the 25-year-old former barista told a few dozen labor activists that a great way to build trust with co-workers and bosses is to volunteer for thankless chores. In his case, that meant spending months at a Starbucks outside Buffalo in 2021 getting on his knees and reaching beneath the sinks to yank loose the grimy mix of mocha chips, espresso beans, congealed milk and rotten fruit that regularly stopped things up. “Be the person who’s willing,” Westlake said. “It’s going to make the company less suspicious of you.”
